Last week, in preparation of my demo, I made some fish curry. We were supposed to have guests but they cancelled. Since I knew that we would be again eating the fish curry during my demo, I transformed it into these cutlets. They are easy to make and very tasty.Fish CutletsIngredients2 fish filets (I used sea bream, you could also use canned fish)1 shallot chopped2 tbsp oil4 tbsps bread crumbs1 eggLemon juiceFor the spice paste:4 tbsp coriander leaves2 cloves garlic3 cm ginger2 cm fresh turmeric (or 1 tps powder)½ tsp chilli powder or paprika for those who do not want it hotMethodMake the spice paste in a mortar and pestle or in a mixer.Flake the fish and add the paste, shallot, egg and breadcrumbs.Make small cutlets.Fry till golden in hot oil.Serve garnished with lemon juice and a salad.
