« Basile Saint Germain – inspired by time spent working at Chateau Latour – staked his claim fifteen years ago in assorted pebbly Villefranchian and basaltic parcels around Nizas and Caux, with the idea of reflecting this terroir through wines with purity of fruit and no wood influence. Both his approach to wine growing (including the use of « photo-biological » herbal preparations) and to explaining his intentions are meticulous. The broad, conical fermenters here were chosen to maximize passive contact with the skin cap and a concomitant reduction in active extraction. The exception to « no wood » is Les Aurelles’s white, a 100 % Roussanne vinified in barrique. »
