Quand le madère vous inspire un dessert fou,fou,fou...

Ce matin, dans le blog que je tiens au quotidien pour Vins Étonnants, j'ai écrit un article sur la recherche d'un accord culinaire avec un madère de 5 ans d'âge. Je ne vais pas le réécrire ici, alors qu'il suffit d'un CLIC pour le lire. Par contre, je vais vous donner l'intégralité de la recette, ce que je n'ai pas fait dans l'article, car ça aurait été un peu fastidieux. Les saveurs du Madère tournent beaucoup autour du café, des fruits à coques, du cacao, des épices. C'est ce que l'on retrouve en toute logique dans ce dessert.

1. Glace aux amandes grillées

50 cl de lait de riz 

150 g d'amandes émondées

100 g de sucre roux

1/3  cuill à café  de gomme de xanthane

Faire griller les amandes au four 12 mn à 200° (surveiller)

Faire chauffer le lait avec le sucre. Ajouter les amandes tout juste sorties du four. Laisser infuser et tiédir. Ajouter la gomme de xanthane et mixer finement. Turbiner et mettre au congélateur.
