It's difficult not to comeback to all the classics that we love but that quickly bore us...This club sandwich is quite original and changes even though the main ingredients are quite classic. The strong taste of the pesto is really well balanced with the mozzarella and it all goes perfectly with the tomato... in a nutshell it's like having sunshine in a sandwich and it's perfect for vegetarians.Ingredients (for 2 sandwiches):-4 slices of cereal or grain bread-1 tomato-1 mozzarella -5 sprigs of basil-1 tablespoon of pine nut-2 tablespoons of olive oil-1 teaspoon of lemon juice-salt, pepperGrill your slices of bread until golden, crunchy but still soft inside.In a blender put the pine nuts, the basil, the olive oil, the lemon juice than mix until you obtain a pesto but be careful it mustn't be liquid! Taste than season with salt and pepper.Peel your tomatoes than cut them in slices and take out the seeds. Cut the mozzarella in slices.Spread the pesto on each slices of bread than on two slices share the slices of tomato and mozzarella than close the sandwich and cut it in two. You can now eat them or take them away.
