There is nothing better than doing home-made ice-cream it's tastier and it allow you to do all kinds of flavors really easily! This iced orange and Cointreau soufflé is extremely easy to make but the result is incredible and the way you make the ice-cream look like a real soufflé is a really super idea!Ingredients (for 10 glasses):-2 oranges-2 cups of whole milk-1 cup of sugar-3 eggs and 3 egg yolks-2 tablespoons of Cointreau-4 gelatin sheetsPut the gelatin sheets in a bowl of cold water to soften them. In a big bowl whisk 3/4 cup of sugar and 6 egg yolks until it whitens. In a sauce pan heat the milk until it starts to come to a boil than pour it on the previous batter while whisking. Put this batter back in the sauce pan and cook it on a low heat and mix until it coats the spatula than take it out of the heat. Add the wringed gelatin and mix until it has melted. Put this cream in a big bowl to cool it and when it's at room temperature add the Cointreau, the zest of one orange and the juice of two oranges. Mix well to incorporate it and put it in a fridge a bit.Beat the egg whites until ferm and add the rest of the sugar. Incorporate them to the orange cream. Than pour this cream in small glasses or ramekin circled by greaseproof paper. The greaseproof paper must be taller than the glass or ramekin (about 1,5 or 2 inches) to really look like a soufflé, it must circle the outside of the glass or ramekin and it must be closed solidly so it won't overflow. Put them in the freezer for at least 10 hours. Take them out 10 or 15 minutes before you serve. Decorate them with orange zests.
