I love tapioca pearls for desert
with some coco milk because the texture is really nice and the taste is to die
for!! Here I decided to serve them with a passion fruit coulis to bring a
little bit of acidity which is a perfect blend! This recipe can be serve warm
(I love it) or cold (I love it too!!) so just choose!!
Ingredients (for 6 persons):
-2 cups of coco cream
-1 small cup of milk
-4,5 oz. of tapioca pearls
-6 passion fruits
-4 tablespoons of sugar
-1 gelatin leaf
Pour the coco cream and ¾ of the
milk in a saucepan. Add the tapioca pearls and cook for 20 minutes and mix so
it won’t stick and add progressively the rest of the milk when it starts to thicken.
After 20 minutes it must be creamy. Add 3 tablespoons of sugar and let it cool.
Take the flesh out of the passion
fruits and pour it in the casserole, bring to a boil with the rest of sugar.
Soften the gelatin in a bowl of cold water. Add the drained gelatin and mix away
from the heat. Let it cool.
Make the glasses by putting the
coulis at the bottom of each ones and share delicately the tapioca pearls above.
