

***Regular readers of this blog know our love for offal. Since a while, I wanted to go to this restaurant, that was a “triperie” (offal store) and which continues to have offal based food. There was one particular dish, a speciality of Brussels, that one finds rarely on the menu of restaurants and that really tempted me: “Choesels”. In local language “choesels” are beef pancreas. There are used bind the sauce made with maderia wine.
