How nice to cook shrimp... not only it's delicious but it also allows us to innovate and cook it in so many different ways! Looking for a starter that would be fresh but also that would dazzle my guests (it's quite hard to impress two of these guests in particular because they are excellent cooks and without them I wouldn't be the cook I am today) so I decided to cook shrimp balls with a subtle taste of herbs with a really tasty sauce and with a sweet and savoury salad... A lot of different tastes and colours in this plate but it was a perfect match and mostly really coherent. A real success because my guests loved it (and I think I can be quite proud!).Ingredients (for 5 persons):-14oz of cooked shrimp -2 eggs and 1 egg yolk-2 tablespoons of corn starch -bread crumbs-oil to fry -1/2pineapple-1 big grapefruit -1/2 orange-1 avocado -1 teaspoon of mustard -1/4 teaspoon of lime zest-1 tablespoon of lime juice -1 garlic clove cut in 4 -olive oil-1 tablespoon of hot water -chive-parsley-coriander -1 pinch of chilli powder-salt, pepperPeel and cut in small dices the pineapple, the grapefruit and avocado and put them together in a bowl. Sprinkle this salad with the juice of an half orange, add a little bit of coriander than mix. Put aside in the fridge. Peel the shrimps, cut them in half and place them in a blender. Add one egg and the corn starch than mix. Add a little bit of chive and parsley, pepper and chilli powder. Heat the oil to fry (in a pan or a fryer). Beat an egg in a soup plate. In another plate, put the bread crumbs. Make shrimp balls than coat them in the egg than the bread crumbs and fry them until they are golden. Put them in an absorbing paper to drain the grease.Prepare the garlic mayo by mixing the egg yolk with the mustard, the lime juice and zest and the garlic. It must be homogeneous. While mixing, pour progressively the olive oil until the mayo starts to thickens than add a tablespoon of hot water to set it.When you serve this starter the shrimp balls must be hot and the mayonnaise and salad must be fresh.
